The Best Bacon, Lettuce & Tomato Sandwich - BLT Recipe

This delicious BLT recipe will show you how to take a simple bacon, lettuce & tomato sandwich and elevate it to new & delicious heights!

  • 1 Egg
  • 1 tsp White Wine Vinegar
  • 1/2 tsp Mustard
  • 50 ml Neutral Oil Sunflower, vegetable or non-virgin olive
  • Salt
  • Lemon Juice


  • 3 rashers Bacon
  • Flour


  • Bread
  • Butter
  • Lettuce
  • Salt
  • Lemon Juice
  • 1 Tomato
  • Black Pepper


Cook the bacon

  • Pre-heat an oven to 180c.
  • Dust both sides of the bacon with flour and then place in the oven for 20 - 30 minutes, depending how crispy you like it.

Make the mayo

  • Crack the egg into a bowl and whisk.
  • Add 1/2 tsp mustard and a tsp vinegar and whisk together, ideally with an electronic whisk. Be thorough. You want it to thicken before you add the oil.
  • Add a tiny bit of oil and continue to whisk. Don't let the mixture get too runny.
  • Keep on adding tiny bits of oil, bit by bit, continuously whisking the mixture, until the whole 50ml of oil is combined.
  • Season with salt and optional lemon juice.

Make the sandwich

  • Cut two slices of bread and butter both sides of each.
  • Place into a hot pan on a high temperature and cook each side until gorgeously golden brown.
  • Remove from the pan and butter again if desired.
  • Finely slice some lettuce and make a substantial layer on the bottom piece of bread. Season with salt and lemon juice if desired, depending on the saltiness of your bacon.
  • Thinly slice a tomato and season with salt and black pepper if desired/required. Don't go overboard!
  • Spoon over a thick layer of mayonnaise.
  • Either add the bacon directly or chop it up and create a nice layer of bacon on top.
  • Either add the top slice or add another layer of mayo first and then do so.
