Introduction

Thai cuisine is an absolute favourite of mine. Thai food has all the spice and ferocity you’ll find in even the most potent of dishes. And with it comes an incredible freshness and vibrancy. One that is, to my knowledge, unrivalled by that of any other cuisine. Though I look forward to being shown otherwise!

It should come as no wonder that these Thai dishes were amongst the first I have chosen to write about. Not only does Thai cuisine possess that uniquely fiery spice, but a wonderfully balanced depth of sweet, sour and salty as well.

Best known for its national dish, the surprisingly subtle Pad Thai, and for the much spicier curries known first and foremost by colour, Thai cuisine is actually comprised of a vast wealth of dishes we should definitely pay more attention to!

Why settle for just another red curry, for example, when you could have a delicious Thai Panang Curry? A wonderful, similarly spiced dish in which peanuts are added to give a depth and complexity we may not have come to expect.

Or maybe a Pad Prik King? A Thai dry curry, more akin to a stir fry, possessing a wonderful fresh fire built from beautiful, untempered spices and perfectly fresh aromats.
