Introduction

I’ve always love to cook. That has meant cooking everything from curries to casseroles, and vegan dishes to mixed grills.

But when I experienced my first taste of Michellin Star cuisine, I started having more difficulty with some areas of my cooking. I was surrounded by such incredible food and I didn’t understand how to get everything there.

Over the years since, I’ve learned some of those techniques and I’ve developed my own abilities. But more importantly, I’ve learned when to reject them in favour of more realistic approaches to food that are viable in day-to-day life.

That realisation completely changed the way I cook fish and seafood. I had spent years trying to work out how best to showcase those wonderful flavours through advanced techniques and busy plates.

But the truth was so much simpler. The reality was that fish is at its best when it is plated and presented as simply as possible. Allowed to shine for what it is, garnished and seasoned, but not bothered and fussed.

And while I absolutely still use seafood in curries and in more complex dishes, I don’t try to force it where force isn’t needed.
