The most honest description I can give of this dish is that it’s junk food. In the nicest possible way, it is a special kind of undefinable junk food.

The flavours are perhaps most akin to those you might find atop a Hawaiian Pizza. Yet the smoky, sweet and savoury sauce holds a certain something of Korean cuisine. A very welcome certain something.

The recipe seeks to emulate a dish I first ordered from a takeaway. You might think such a backstory might go some way to informing its true origin, but I somehow doubt a dish like this could ever really claim to have first been made in China.

Though I am more than prepared to be wrong.

Even my after-the-fact research into its background yields too many differing answers to really satisfy my curiosity. Unless we have a uniquely mixed-race dish on our hands, I feel ill-qualified to select from the many options the story I think most likely.

Regardless, what we have is a sweet, smoky dish with satisfying chunks of chicken, comforting rice, crunchy bits of pepper, comforting rice and a wonderful, sticky sauce that absolutely bursts with flavour.

As long as you like food, I kind of think this dish might be for you.

Step-by-Step How to – Easy Pineapple Chicken Recipe | Chicken & Pineapple Stirfry

This chicken & pineapple stirfy is as easy as any recipe you’ll find anywhere online. Please don’t hold me to that. I don’t want links to a bunch of egg-boiling tutorials or anything like that!

All we’re really going to be doing today is stir-frying a few simple ingredients and making a super-simple sauce from already-prepared ingredients. The quantities only matter as far as providing enough for your guests or family members to eat, and insofar as they bring balance to the sauce.

The first thing to do will be to chop all of the ingredients down to size. First the chicken breasts, then the pineapple and the peppers. Keep the meat separate, for all the obvious and a few not-so-obvious reasons.

You’ll find a much more detailed list of the quantities below. But if you want to guesstimate as you go, I’m sure you’ll do just fine. There’s lots of room for adjustment.

I also like to measure out the rice at this point. I find it helpful to have that up and ready before starting. It means I don’t have to fumble around for anything when I’ve got my main ingredients cooking.

Slicing up a few green onions wouldn’t go amiss at this stage either.

Next up we’ll put together our sauce. This is probably the most complex part of the dish, but it’s still one of the easiest sauces you will ever put together.

Add a little bit of pureed ginger and pureed garlic to a small bowl and mix them with chicken stock, honey and soy sauce. Then add a tiny splash of sesame oil and some smoked paprika.

A splash of mirin wouldn’t go amiss here either, but it isn’t vital.

As far as prep goes, that’s kind of that. The next thing to do is cook!

Firstly, we might as well get the rice simmering away. It doesn’t take long to cook, but it’s easy enough to re-heat and nor does this pineapple chicken stirfry. Rice holds its heat well and if you do need to warm it back up, that’s what microwaves are for.

Literally. That’s literally what they’re for.

Next up, we’ll get our chicken sizzling away. I like to start at a medium-high temperature and adjust if necessary. Anything else tends to burn either the chicken through the amount of time it’s in the pan or the vegetables who don’t take kindly to such intense heat.

Once the chicken is browned all over, throw in the peppers and cook them through as well. Add the pineapple, stirring it in with everything else and allowing it to warm, then give the whole dish a gentle dusting with cornflour.

Once the cornflour is stirred into the dish and has had a couple of minutes to cook through, you can add the sauce, which should quickly thicken with the cornflour and coat the other ingredients.

Once that’s done, check the seasoning and then everything can be plated up and garnished with sesame seeds and green onion.

A few final things to remember

  • Pork would work well here in place of chicken. As would anything else for that matter.
  • You could swap out the rice for noodles if you prefer, or even add extra main ingredients and skip the rice entirely.
  • You could scatter chilli over the top instead of or as well as the spring onion. I like the inoffensive sweetness of this dish, but chilli would suit it just fine, as it will in next week’s recipe!

Easy Pineapple Chicken Recipe | Chicken & Pineapple Stirfry

Ingredients
  

  • 2 Chicken Breasts
  • 1/2 Pineapple
  • 1 Red Pepper
  • 4 Spring Onions
  • 2 tbsp Cornflour
  • 1 tsp Garlic Paste or very finely chopped garlic
  • 1 tsp Ginger Paste or very finely chopped ginger
  • 1 tsp Smoked Paprika
  • 1/3 cup Chicken Stock
  • 1/3 cup Honey
  • 1/3 cup Soy Sauce
  • 1 tbsp Mirin optional
  • 1 tbsp Sesame Oil optional
  • 1 cup Rice
  • Sesame Seeds
  • Salt

Instructions
 

  • Chop the chicken breasts into bitesize pieces, then set them aside and do the same with the pineapple and the peppers. Keep them all separate.
  • Finely slice or mandolin the green onions and set them aside to scatter over at the end.
  • Mix the honey, soy sauce, chicken stock, ginger, garlic and smoked paprika together, stirring them thoroughly. If you're adding any mirin or sesame oil, do so now, although they are not vital.
  • Simmer the rice in a small pan, submerged in roughly double its own volume in water. After 10 minutes or so, the water should have evaporated, leaving you with light, fluffy rice. Give it a taste test, season accordingly and if needs be, add a little more water and cook a little longer.
  • Next up, sear the chicken all over, on a medium high temperature with a good splash of oil
  • Add the peppers and cook them through as well, then add the pineapple and stir it in and allow it to warm.
  • Add the cornflour and allow it a few minutes to cook through, stirring as you go. Then add half the sauce and stir everything together. Keep adding splashes of sauce until you're satisfied you have enough for all the ingredients and the rice as well. Your mileage will vary on how thick you like your sauce.
  • Taste test the seasoning and plate everything up, then garnish with the spring onion and sesame seeds.
