Introduction

When I was young, breakfast meant a bowl of cereal. It was quick, easy and refreshing. And surprisingly delicious. At least to my young mouth!

Unfortunately, breakfast more of a practical matter these days. Breakfast should be healthy and sensible. And it should be sensibly priced and practical. We all know breakfast can be an indulgent meal. But normally, it’s something we do to keep us going until lunchtime.

Ultimately, however, we can’t eat yogurt, granola and fruit every single day. We have to treat ourselves occasionally. The important question is whether that treat comes in the form of sweet, sugary pancakes, a salty, greasy fried breakfast or anything in between.

This breakfast roll recipe fits just on the savoury side of in between. You get the saltiness and savouriness of the eggs and bacon with the wonderful sweet, lightness of a brioche bun. These were actually made with a variation of my own recipe, which you’ll find right here.

About the dish

The bacon sandwich is a classic in anyone’s book. Something about crispy, salty bacon wrapped in soft, white bread is almost unarguably wonderful. And whether you prefer ketchup or brown sauce is another issue entirely!

A breakfast roll takes that simple goodness and loosens it up a little. You can substitute the meat. Or you could add an egg. However you like it cooked! You could even swap it all out for smoked salmon and cream cheese.

About this breakfast roll recipe

This version keeps it nice and simple. We’re going to stick with the bacon theme. But we’re also going to add an egg, some spinach and some good old fashioned melty cheese.

Oh, and in this bacon & egg sandwich recipe, we’ll be using a beautiful brioche bun instead of regular sliced bread. If you wanted to use a different kind of bread, you could go with anything you like. I would naturally recommend either this delightful wholemeal bread or this wonderful crusty white loaf.

We will also be cooking the bacon in the oven. It’s a favourite technique of mine and it’s a shame it’s so rarely used. You end up with a far more evenly cooked piece of bacon. And it’s just as crispy and crunchy as ever. Frankly, I would say even more so.

Everything else is simple and straightforward. A little bit of wilted spinach and a careful bit of cheese placement.

Things to remember!

  • Ultimately, we’re making a sandwich. So I don’t think anyone is here to learn how it’s done. The important thing is to give a little love to the basics. Because they’re what can take your sandwich to the next level.
  • Baking your own bread will absolutely elevate this recipe. I’ve posted a few links to options above and below. But if you’ve already got some fantastic store-bought bread, go right ahead and skip that part. Why not make your life a little easier?
  • Toasting the bun is the easiest way to pack in more flavour. It does something to bread that just seems to make it better.
  • Oven-roasting the bacon makes it flat, crispy and overall fantastic. Do it. All the time. Even when you don’t want bacon!

Breakfast Roll Recipe | Delicious Bacon & Egg Sandwich

Ingredients
  

  • 1 Brioche Bun or appropriate alternative
  • Butter
  • 2 rashers Bacon
  • 1 Egg
  • 1 handful Spinach
  • 1 slice American Style Cheese Slice or appropriate alternative – eg provolone
  • Salt
  • Pepper
  • Cooking Oil
  • Flour to dust

Instructions
 

Bacon

  • Pre-heat an oven to 180c.
  • Dust your bacon with a very thin layer of flour and place on a wire rack in the oven.
  • Cook for roughly 30 minutes or until it’s as crispy as you like.

The Bread

  • Slice your bread roll and butter each half, then toast in a hot, dry pan until golden brown. Flip over and toast briefly on the top and bottom as well. Enough to bring a little colour, but not too much.
  • Butter both slices again, then set aside while you cook the egg.

Everything else

  • Add a little oil to the pan and reduce the heat to low-medium.
  • Once the pan is cool enough, crack your egg in carefully and allow it to cook through on a gentle heat. Season with a little salt and pepper and set aside while you wilt the spinach.
  • Drop your spinach into the pan and stir into the residual oil or butter.

Build

  • After a minute or so, the spinach will wilt and you can pile it on top of the bottom part of your sandwich.
  • Place a slice of cheese on top, followed by the egg and then the bacon.
  • Apply your choice of condiments and position the top bun.
