Introduction

I really do love strong flavours. When I cook, I use lots and lots of aromatic ingredients. I love making stocks packed full of as much flavour as possible. And when I follow recipes I always aim for the upper end of the advised amount of each ingredient. Sometimes even a little more!

As a result, I use lots of herbs and spices in my cooking. When I roast a chicken, it’s stuffed full of lemon and rosemary. If I make a tomato sauce, it’s filled with simmering herbs.

Spices, then, are one of my favourite things. You can do so many wonderful things with them. They can be powerful, subtle and somewhere in between. They can be combined in as many different combinations as you can imagine.

Among my favourite spices are coriander and cinnamon. Two beautiful flavours that bring a totally different taste to a meal. One citrus and piney, the other sweet and fruity.

But of all the spices, perhaps my favourite is cumin. Cumin is a wonderful flavour in its own right, yet very hard to define. It’s also a fantastic seasoning. It has a salty, earthy flavour, almost umami in spice form. There are times when I will make a spiced dish without it, but it’s never an easy decision!

About the Indian rice dish, Jeera Rice

Jeera rice is, unsurprisingly, an Indian rice dish. It’s a spiced dish, mainly flavoured with cumin. It can be made either on the stove top or in the oven.

Jeera itself, or zeera, means cumin. So the dish is essentially rice with cumin. Other ingredients can certainly be added, but that’s what makes it what it is. The cumin is fried in oil and then the rice and salt is added. The rice is submerged in roughly twice the volume of water and everything is simmered, covered, until the liquid is absorbed.

Naturally, the dish goes well as an accompaniment to curries. It is a warming, savoury dish, so my gut points me to similarly warming, savoury curries. This rice would pair very well, for example, with my fantastic rogan josh.

As I mentioned above, this particular Indian rice dish is primarily flavoured with cumin. Naturally, if other flavours are being added, they would be fried off alongside the cumin or added to simmer away with the liquid. Any whole spices could be added for flavour, but it doesn’t need to be a complicated dish. Cumin itself is a beautiful flavour all on its own. With that and just a handful of other things, we can make a very tasty, warming dish, perfect to accompany any number of different sides.

In this instance, we’re going to add cloves, bay and cardamom. Other commonly used spices include cinnamon and star anise. Both add just a little more flavour to the dish, but neither are totally necessary. Feel free, however, to add them to the dish if preferred.

Finally, this is being done on the stove top. But you could absolutely finish cooking the dish in the oven. As you would a pilau. You could even cook the rice itself in stock or coconut milk, for a different take on the dish. Though I’m not sure it would strictly be a jeera rice any more!

Indian Rice Dish – Jeera Rice | Delicious Fried Rice with Cumin

This recipe will cover a wonderful Indian rice dish known as Jeera Rice. The dish is very simple and is essentially fried rice with cumin and a few other wonderful spices.

Ingredients
  

  • 1.5 cups Basmati Rice
  • 2 tsp Cumin Seeds
  • 5 Cloves
  • 5 Cardamom Pods
  • Salt
  • Cooking Oil

Instructions
 

  • Add 2 tsp cumin seeds, 5 cloves and 5 cardamom pods to an oiled pan on medium heat and temper for 1 – 2 minutes.
  • Add the rice and stir everything together, seasoning with salt.
  • Pour over enough boiling water to submerge and then again. Add a bay leaf at this stage as well.
  • Simmer this until the water is completely gone. You can do this with a lid, which will take a little longer. Or you can do it without the lid and top up the water until the rice is cooked.
  • Stir everything together and serve.
