Introduction

I’ve made a few sandwich recipes recently, like this gorgeous chicken salad sandwich. I tend to dip in and out of baking and the end result is a sudden surge of sandwich recipes, salads with croutons and soups to dip buttered and toasted slices of bread into. In this instance I made a couple of these really simple, beautiful loaves of white bread. Ever since I’ve been intentionally cooking that little bit too much of things so I can stuff the leftovers into sandwiches! Just like I did in my leftover roast beef sandwich recipe.

Not long ago, I also baked some surprisingly simple brioche burger buns. They would also be perfectly appropriate for a recipe like this. In fact, you could strip out the L and the T and add an egg. Then you’d have an absolutely perfect breakfast roll.

About this recipe

This recipe is very, very simple. How complicated can a BLT recipe really be? The most important things are the little things. That’s why I’m going to show you how to cook perfect bacon in the oven, how to make mayonnaise and the importance of toasting that bread and getting a lovely bit of colour and flavour. After that, it’s simple touches like seasoning your salad. It makes a difference!

You can make the bacon crispy or you can keep it a little on the softer side. It’s completely up to you. I chopped it up to make the sandwich a little easier to built, but I secretly wish I’d left it whole for that sexy bacon sandwich look and lovely bacon bite.

The Best Bacon, Lettuce & Tomato Sandwich – BLT Recipe

This delicious BLT recipe will show you how to take a simple bacon, lettuce & tomato sandwich and elevate it to new & delicious heights!

Ingredients
  

Mayo

  • 1 Egg
  • 1 tsp White Wine Vinegar
  • 1/2 tsp Mustard
  • 50 ml Neutral Oil Sunflower, vegetable or non-virgin olive
  • Salt
  • Lemon Juice

Bacon

  • 3 rashers Bacon
  • Flour

Sandwich

  • Bread
  • Butter
  • Lettuce
  • Salt
  • Lemon Juice
  • 1 Tomato
  • Black Pepper

Instructions
 

Cook the bacon

  • Pre-heat an oven to 180c.
  • Dust both sides of the bacon with flour and then place in the oven for 20 – 30 minutes, depending how crispy you like it.

Make the mayo

  • Crack the egg into a bowl and whisk.
  • Add 1/2 tsp mustard and a tsp vinegar and whisk together, ideally with an electronic whisk. Be thorough. You want it to thicken before you add the oil.
  • Add a tiny bit of oil and continue to whisk. Don’t let the mixture get too runny.
  • Keep on adding tiny bits of oil, bit by bit, continuously whisking the mixture, until the whole 50ml of oil is combined.
  • Season with salt and optional lemon juice.

Make the sandwich

  • Cut two slices of bread and butter both sides of each.
  • Place into a hot pan on a high temperature and cook each side until gorgeously golden brown.
  • Remove from the pan and butter again if desired.
  • Finely slice some lettuce and make a substantial layer on the bottom piece of bread. Season with salt and lemon juice if desired, depending on the saltiness of your bacon.
  • Thinly slice a tomato and season with salt and black pepper if desired/required. Don’t go overboard!
  • Spoon over a thick layer of mayonnaise.
  • Either add the bacon directly or chop it up and create a nice layer of bacon on top.
  • Either add the top slice or add another layer of mayo first and then do so.
