Introduction

After posting yesterday’s simple home made white bread recipe I thought it would be a good idea to post something that would make proper use of it. I also fancied a sandwich. Quite quickly, this tasty grilled chicken and bacon salad sandwich recipe was born.

There are some really great classics in the world of sandwiches. Everything from the Croque Monsieur to the Reuben and then from the famous Cuban to the BLT. Perhaps the greatest thing about sandwiches is that you can work with what you have. And as long as you’re not in dire straights, that’s usually enough to make something pretty awesome.

In this instance, I had everything necessary to make a really awesome grilled chicken salad sandwich. All it really takes is chicken, salad, bread and mayo. Everything else is an unnecessary but very welcome extra. Fortunately for me, I got to throw a few of those unnecessary but welcome extras in! Hopefully I’ll be able to show you how much they made this dish pop!

About the recipe

I’m not going to try to teach anyone how to reinvent the wheel here. This is a simple recipe that takes perfectly normal ingredients and makes full use of them. The goal of this recipe is to take each and every ingredient and really extract as much flavour as possible. We’re going to do that by exploiting simple, often-overlooked techniques that really help us to make the most of the ingredients in the dish!

It really comes down to the little things. It’s the making of home-made mayonnaise and the crisping of chicken skin. The oven-cooking of the bacon and the toasting of the bread. Those little touches take a very humble, simple sandwich and turn it into a meal. One that hits you with zingy mayo, succulent chicken, crunchy lettuce and crispy bacon, chicken skin and bread!

The Best Grilled Chicken and Bacon Salad Sandwich Recipe

This tasty grilled chicken and bacon salad sandwich recipe will take a simple sandwich and elevate it to another level, using a few very simple techniques we should all learn to embrace in our day-to-day cooking!

Ingredients
  

For the Mayo

  • 2 Eggs Yolk Only
  • Half tsp Mustard
  • Half Cup Oil
  • Half Lemon
  • Salt

The Chicken

  • 1 Medium Whole Chicken
  • 1 Brown Onion
  • 1 Lemon
  • Salt
  • Pepper
  • Oil

To Build

  • 2 Slices White Bread
  • 2 Rashers Bacon
  • Flour
  • Lettuce
  • Butter

Instructions
 

For the Chicken

  • Pre-heat an oven to 180c
  • Halve an onion and a lemon and stuff what you can into the opening on the underside of the chicken
  • Season the chicken generously with salt and pepper and place in the oven for 1 hour and 20 minutes

For the Bacon

  • Dust the slices of bacon with an even coating of flour on both sides
  • Cook in the oven for 20 – 30 minutes, then set aside

For the Mayo

  • While the chicken cooks, mix the two egg yolks with the juice of half a lemon and half a teaspoon of mustard
  • Using an electronic mixer, add in half a cup of oil, a little bit at a time, thoroughly combining
  • Once the oil is added and the ideal consistency is reached, season with salt

Making the Sandwich

  • When the chicken is cooked, allow it to rest for 10 minutes and then remove the skin in pieces roughly the size of a slice of bacon
  • Place those pieces of skin into the oven for a further 10 – 15 minutes
  • Remove one of the chicken breasts and chop into small pieces
  • Combine those pieces of chicken and add a suitable amount of mayo, then add a tiny bit more! (Don’t overseason at this point. Both the bacon and chicken skin will bring a lot of salt.)
  • Finely chop a small handful of lettuce
  • Butter both sides of both slices of bread
  • Fry the buttered bread on both sides for a couple of minutes a side on a medium temperature. Just enough to brown and toast.
  • Add an extra layer of mayo to each slice of bread
  • Put the lettuce on top of the bottom slices, then the bacon
  • Now add the chicken mayo and finally the skins
