Introduction

We’re hosting a barbecue this evening, with a few friends of ours from the village. There are going to be four of us and a child. It took a little while, but it suddenly dawned on me that we might need a little more food. We only had the four store-bought bread rolls that were sitting in the cupboard. So it might be a wise idea to knock up a quick bread roll recipe and put a few more together!

This is actually only the second time I’ve made a proper brioche dough. I’ve made sweetened bread rolls in the past, but I wouldn’t strictly call them brioche. Fortunately, after a few drinks with some friends last night to celebrate my girlfriend’s birthday, when we came back into the house for something to snack on, these delicious brioche buns were right there waiting for us. I actually think I’m the furthest thing in the world from a baker, but I enjoy making food of all different kinds and I’m really pleased with how these turns out, as good as any bread I’ve ever bought and as soft as any good brioche without being weak or flimsy.

The original plan had actually been to make brioche hot dog rolls, but I would be the first to admit that in my haste to get out into the garden to join the party I might have hastily decided it was easier to change my approach. Nevertheless, the outcome was a bunch of sweet, easy-to-make brioche buns to be used in any manner of situations, from hot dog buns to burger buns to simple bread rolls for a sandwich.

Beautiful Homemade Brioche Burger Buns

These beautiful homemade brioche burger buns are absolutely perfect for this incredible summer weather. They'll go wonderfully with these delicious handmade beef burgers.

Ingredients
  

  • 450 g Plain Flour
  • 1/2 Cup Milk
  • 3/4 Cup Water
  • 125 g Unsalted Butter
  • 7 g Dry Yeast
  • 2 Tbsp Caster Sugar
  • 1 1/2 Tsp Salt
  • Additional Milk for Egg Wash

Instructions
 

  • Heat the milk and water in a pan on a low heat and add the butter, stirring until it melts. Don’t let it get too hot. Just warm enough that the butter melts.
  • Meanwhile, sift the flour into a bowl and mix it with the salt, sugar and yeast, then gradually integrate the liquid. Combine the mixture thoroughly and then knead for about 10 minutes, until the dough is smooth and springy to the touch.
  • Leave, covered, to rise until it has doubled in size. An hour is usually enough, but it can vary. Leaving in a warm place can help the process along.
  • Bat it down and knead it a little more. It will feel tighter and springier at this stage.
  • Rest for a further few minutes and then divide into 8 – 10 pieces, shaped either like burger buns or hot dog buns.
  • Place them on baking powder in the trays they will go into the oven in, then pre-heat that oven to 200c whilst they prove.
  • Brush them with milk and optionally sprinkle over sesame seeds or poppy seeds, then allow them to cook for about 14 minutes, then allow to cool.
