This decadent chocolate and banana cake recipe will show you how to make a very simple chocolate chip banana cake and how to make the rich, creamy ganache you’ll be spreading all over the top. Since I made this, I have also uploaded an even chocolatier black forest gateau.

Introduction

For the past week my girlfriend has been planning to make a chocolate chip banana cake using a recipe she has in one of her old cookbooks. She found a recipe, brought the ingredients and set aside time every day in which to do it. Naturally, I couldn’t help but notice the increasingly brown and gooey bananas sitting on the side. But every time I asked when she would make the cake, she informed me that she would “do it tomorrow”.

That brings us today. This morning, to be exact. I had now spent several days watching in horror as those bananas drew ever-closer to the point of no return. I cornered her and informed her that I would make the chocolate chip banana cake. The only catch was that I would be doing it my way.

After all, I’ve been on a bit of a cake fix lately, which all started with this very easy rhubarb drizzle cake. I’ve been really enjoying it. Plus, those bananas weren’t going to make it another day. And I really hate waste.

About this recipe

As I mentioned, this recipe is based on a very simple cake recipe I like to use as the base for most of the cakes I make. I find it a safe starting point to work from and tweak to make a new, unique cake. For example, in this instance, I swapped out an additional egg for some blended banana inside the cake. It gave the cake more flavour without sacrificing any of the moisture the egg might provide, or its binding ability.

Generally speaking, if you need a simple cake recipe, you can work from this basic theme. Just make a few very simple adjustments and you’ll start to get a feel for how those changes can be made. Decadent Chocolate Chip Banana Cake

This decadent chocolate and banana cake will show you how to make a very simple chocolate chip banana cake and how to make the rich, creamy ganache you'll be spreading all over the top. Since the making of this recipe, I actually took the chocolateness even further in my cake making, with this wonderful black forest gateau.

Ingredients
  

For the Cake

  • 4 Bananas
  • 200 g Flour
  • 200 g Butter softened
  • 200 g Caster Sugar
  • 3 Eggs
  • Chocolate Chips
  • Salt

For the Ganache

  • 150 g Chocolate
  • 300 ml Single Cream

Instructions
 

  • Pre-heat an oven to 160.
  • We’ll start by quickly making the ganache. You can use whatever chocolate you like at this stage. Melt it down on a low temperature and mix with the cream at a ration of 1:2.
  • Peel 2 of the bananas and slice them both down the middle. You want these bananas to be suitably ripe. Use them to line the bottom of a rectangular cake tin. You may have to cut one of the halves in two to cover it neatly. As a quick note, the “tin” I used was actually a silicone mould, so I didn’t have to line it at all. If you’re using a more traditional cake tin, line it with baking paper and butter before you start adding ingredients.
  • Mix the butter and the sugar. Cream them together first with a spoon and then if necessary with a whisk. You’ll know it’s ready when it starts to go pale.
  • Now add the eggs, one at a time, each time combining thoroughly.
  • Peel and add the two bananas, again mixing in thoroughly.
  • Sift the flour through a sieve and mix in thoroughly. Add a handful of chocolate chips and stir in loosely.
  • Spread the mixture into the mould, filling it as neatly as you can. Place this into the oven and allow it to cook for 50-60 minutes. Insert a skewer into the centre of the cake and if it comes out dry, you’re ready. Otherwise, put the cake back into the oven for a further five minutes and try again.
  • Allow the cake to cool a little and remove it from the tin.
  • If needs be, heat the ganache back up a little, but it should still be warm and spreadable. Layer it thickly over the top and encourage it to spill a little down the sides!
